Banana Bread (Vegan & GF)
Hello everyone, in today's post, I'll be sharing a healthy vegan and gluten-free banana bread recipe that is really delicious and simple to make. What's great about this recipe is that you can improve it by adding or substituting any ingredients you'd prefer. I love making banana bread because it's the perfect comfort food, and since it's healthy, I feel less guilty for eating most of it. It's one of my favorite things to eat for breakfast next to a warm cup of tea.
INGREDIENTS:
- 3-4 Ripe Bananas
- 2 cups of Almond Flour
- 1/3 Cup of Brown Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 Cup of Coconut oil ( or oil of choice)
- Pinch of Salt
- Hand Full of Chocolate Chips or Chopped Walnuts
INSTRUCTIONS:
- Preheat the oven to 350 degrees.
- In a bowl, mash the bananas using a fork, add the melted coconut oil, and stir well.
- In a separate bowl, add the flour, brown sugar, baking soda, and baking powder. Mix to combine.
- Then add the wet ingredients to the dry ingredients and mix well.
- Pour the batter into a greased loaf pan and bake for 40-45 minutes or until browned. *Check if it's done by inserting a fork. If it's not clean, bake for 5 more minutes.
- Allow the banana bread to cool for 10-15 minutes and serve when ready to eat.
